										<content:encoded><![CDATA[<p>Even though there are many different recipe varieties for this dessert, we found the one that is extremely easy to make and it’s perfect for these hot summery days when we don’t want to spend too much time by the oven. The prep-time for this one-bowl recipe is only 10 min readutes (not including the baking time). Despite this recipe originally being made with some specific ingredients, such as <a href="https://en.wikipedia.org/wiki/Semolina">semolina</a> and <a href="https://en.wikipedia.org/wiki/Smetana_(dairy_product)">smetana</a>, there are much more accessible alternatives that work just as well.</p>
<p>To make Zapekanka, you&#8217;re going to need:</p>
<ul>
<li>600 g cottage cheese</li>
<li>1 egg</li>
<li>6-7 tablespoons semolina (or plain flour)</li>
<li>Half cup of sugar</li>
<li>1 teaspoon of baking soda with a dash of vinegar or 1 teaspoon of baking powder</li>
<li>Pinch of salt</li>
<li>50 g of sour cream</li>
<li>Vanilla extract or vanilla sugar</li>
<li>Raisins or dried cranberries (optional)</li>
<li>Butter (for greasing the pan)</li>
</ul>
<p>The process:</p>
<ol>
<li>Preheat oven to 180 °C / 350 °F</li>
<li>Mix the cottage cheese with semolina or flour</li>
<li>Add an egg and beat in</li>
<li>Add the sugar and beat in</li>
<li>Add in the vanilla and raisins or dried cranberries, if desired</li>
<li>Grease the pan with butter</li>
<li>Pour the mixture into the pan and top with sour cream</li>
<li>Bake for 40 minutes</li>
<li>Let cool down completely</li>
</ol>
<p>Zapekanka is served cold and you can use different kinds of toppings, such as berry syrup, jam or anything else that you like.</p>

										<content:encoded><![CDATA[<p>Traditional <strong>Kung Pao Chicken</strong> dish is a perfect choice to spice up your Friday. It will bring the flavour of the Orient and it will keep your stomach full until the moment you head out of the office to enjoy your weekend.</p>
<p>As it turns out, the recipe was created by <strong>Ding Baozhen</strong>, a governor of Sichuan Province during the Qing Dynasty, who had a thing for chicken, peanuts and spicy flavours. During his 10-year service in Sichuan, he contributed a lot to the locals there, which is why the Qing government conferred upon him posthumously an official title <em>Kung Pao</em>, which means <em>an officer who tutors the crown prince</em>.</p>
<p><strong>To make this dish, you’re going to need:</strong></p>
<ul>
<li>400-500 g chicken,</li>
<li>100 g peanuts</li>
</ul>
<p><strong>And to season it all*:</strong></p>
<ul>
<li>dried red chillies,</li>
<li>5 green onions,</li>
<li>a piece of ginger,</li>
<li>5 pieces of garlic,</li>
<li>30 ml cooking oil,</li>
<li>15 ml thick broad-bean sauce,</li>
<li>5 ml cooking wine,</li>
<li>15 ml cooking starch,</li>
<li>2 g salt,</li>
<li>5 ml rice vinegar,</li>
<li>10 ml soy sauce,</li>
<li>5 g sugar.</li>
</ul>
<p>*The amounts of the seasonings can be adjusted according to personal taste.</p>
<p><strong>Preparation</strong></p>
<ol>
<li>Clean the chicken breasts and slice them into smaller pieces.</li>
<li>Stir together the cooking wine, cooking starch and salt, and marinate the chicken cubes in the mixture for half an hour.</li>
<li>Soak peanuts in hot water for 10 min readutes and remove the peanut skin.</li>
<li>Clean the dried red chili peppers and cut them into small pieces. Clean and chop the green onions. Clean and dice the ginger and garlic.</li>
<li>Make a bowl of starchy sauce with the sugar, soy sauce, rice vinegar, and cooking wine.</li>

<p><strong>Cooking Instructions</strong></p>
<ol>
<li>Use a moderate amount of oil to fry the peanuts until they turn yellow. Drain them and set aside to cool.</li>
<li>Using high heat, heat oil in a hot wok, then add the chicken cubes and fry until they turn slightly brown. Drain them and remove them to a plate.</li>
<li>Leave some cooking oil in the wok, and using a high heat stir-fry the dried chillies for 30 seconds to release the spice.</li>
<li>Then re-add the fried chicken cubes and add the diced garlic, ginger and the thick broad-bean sauce. Stir-fry until the sauce becomes red.</li>
<li>Add the starchy sauce and chopped green onions, and then re-add the cool fried peanuts. Stir-fry together for 30 seconds.</li>
<li>Your meal is ready to serve.</li>
</ol>

										<content:encoded><![CDATA[<p>In addition to diversity, wine, fashion, literature and graphic novels, France is also a home of delicious gastronomic pearls, and we&#8217;ve decided to celebrate this day with one of the most popular French pastries. Our Chloe tried herself in baking, so she prepared the recipe for <em>petit</em> and sweet <strong>madeleine cookies</strong>.</p>
<p>Madeleine is a traditional cookie from Commercy and Liverdun, two communes of the Lorraine region in northeastern France.</p>
<p>Although there are many legends of their origin, everybody agrees on one thing – they’re delicious and they go perfectly with a cup of tea or coffee. Even <strong>Marcel Proust</strong>, the famous French writer, recognized the power of madeleines in his epic novel <strong><em>In Search of Lost Time</em></strong> (F.K.A. <a href="https://en.wikipedia.org/wiki/In_Search_of_Lost_Time"><em>Remembrance of Things Past</em></a>). The role of madeleines in his work is to bring back memories and nostalgia and taste of another, lost times.</p>
<p>To help you recall your own memories in these final days of winter, we’re bringing you an easy-to-follow madeleine recipe, with only few basic ingredients.</p>
<p><em>*Before you start, make sure you have a proper mold for madeleines.</em></p>
<p>For this pastry, you’ll need:</p>
<ul>
<li>2 large eggs</li>
<li>2/3 cup sugar</li>
<li>1 teaspoon vanilla extract</li>
<li>1/2 teaspoon grated lemon peel</li>
<li>Pinch of salt</li>
<li>1 cup all-purpose flour</li>
<li>10 tablespoons (1 1/4 sticks) unsalted butter, melted, cooled slightly</li>
<li>Powdered sugar</li>
</ul>

<ol>
<li>Preheat oven to 375 °F (190 °C).</li>
<li>Grease and flour the pan for large madeleines.</li>
<li>With an electric mixer, beat eggs and 2/3 cup sugar in large bowl just to blend.</li>
<li>Beat in vanilla, lemon peel and salt.</li>
<li>Add flour and beat just until blended.</li>
<li>Gradually add cooled melted butter in steady stream, beating just until blended.</li>
<li>Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 15 min read readutes. Before removing them from the pan, let them cool for 5 min readutes.</li>
<li>Dust cookies with powdered sugar, if desired.</li>
</ol>
